Smelt is a small, silver-green fish that lives the majority of its life in the sea, then migrates to fresh water to spawn. Its lean, white flesh has a clean, fresh scent akin to sliced cucumber and a mild flavour. Try grilling smelt with the delicate skin on, or dusting it in batter then pan-frying.
